Chad is one of the biggest countries in Africa; despite of its natural resources (40 million of cultivable area and more than 39 million of ruminants) this country remains poor and has a low income. Around 16 million Chadians, there are some 1,243,524 children malnourished and live in insecurity of food. We have around 400,000 children who are suffering from severe malnutrition. Regarding to the strategies, the government planned a program of caring children from malnutrition, a supplying food and micronutrients. Many NGOs use to import a therapeutic food “plumpy’nut” to overcome this crisis of malnutrition, but this food is so expensive and requires many time before deliver it. Despite of intervention from NGOs and government this situation is getting worst because this solution is not compatible according to the current situation. Other health problem is that people are facing metabolic diseases and it is so difficult to plan a diet intervention in order to handle this health problem. The problem is that there is no research based on local food. Most of research is based on others (exotics food) and as a nutritionist we cannot prevent or heal someone if we don’t know the composition of our local food. Reason why it is so difficult to manage those diseases. Basing on our natural resources we’re intending to made an enriched farina from local food in order to reduce malnutrition and managing some diseases such as: diabetes, gout, hypertension, heart diseases, cancer, and nutritional management of HIV.
